Ingredients
dried mixed fruit 1kg
strong coffee 2 cups (500ml)
self-raising flour 2 cups (300g) sifted
fruit and nut chocolate 150g, chopped
- Place fruit and hot coffee in a large heatproof bowl, cover and set aside to soak overnight.
- Preheat oven to 160C, line the base and two long sides of a 18cm x 28cm lamington tin with non-stick baking paper.
- Add flour and chocolate to fruit mixture and stir with a wooden spoon until well combined. Spread evenly into prepared tin, place in preheated oven and bake for 40 minutes or until skewer inserted into the centre comes out cleanly.
- Remove and set aside in the tin on a wire rack to cool completely.
Thanks to you Karen, my MTM is going to be in seventh heaven when I give her this PP recipe. She was only lamenting last weekend that she would have to work it out as it is one of her staple Christmas fare.
